This recipe of crispy shrimps is ideal as an appetizer when we have visitors. To prepare it, we serve half of the fried in tempura shrimps, a typical variety of preparation in Japanese cuisine, and the half is coated with Chinese noodles. The result will be fantastic, with a strong oriental taste, with which we will surprise our guests.
Albariño - Young white wine
Peel the shrimps, remove the heads and the intestines.
Prink the shrimps tails at skewer sticks, starting with the narrow part and moving towards wider. We season them and put aside.
We separate the whites from the yolks, slightly beat up the whites lightly with a pinch of salt and pass through them the half of the shrimps. We should wait a few minutes, so that the whites will become stickier.
We break the noodles until they are small pieces and pass the shrimps soaked in whites through the noodles and then we put them aside.
We mix of the flour with cold water until we get the desired texture.
We put a saucepan filled with oil over a heat and when it is warmed up, we cook the part of shrimps that has left, frying them and putting on an absorbent paper.
Remove every possible traces of tempura oil, fry the rest of shrimps and put them on the absorbent paper as well.
Spice all shrimps with curry and after that we can serve the dish.
