The prawns cocktail is a delicious entrée that triumphs on many tables during Christmas holidays or just at special occasions. It is a lightweight and balanced dish, where the flavours of the sea perfectly combine with the coolness of fruit and vegetables. Besides, it is very easy to prepare and is also an amazing resource for the hot months of year.

In a pot of boiling water we put salt, peppercorns and bay leaf. As soon as we put the prawns there, the water will stop boiling.
As a starts to boil again, we count one minute, take the prawns off the fire and put them into an ice water in order to cool them.
Peel all the prawns.
Peel the orange and quarter the sections. From the rest of the orange we squeeze the juice.
Prepare the cocktail sauce
Mix mayonnaise, ketchup and orange juice to prepare the sauce.
Grate the egg
Grate boiled egg, try to control that the egg is finely grated. Put it aside.
Prepare the mixture
Mix washed and chopped lettuce, peeled prawns with the sliced pineapple, chopped chives and cocktail sauce.
Serving
Put the prawns on a plate, you can also use the glasses of "zurito" type or cups. Garnish our dish with orange sections, a half cut cherry tomato and a couple of chive leaves.
