Squid with socarrat of paella is a very complete and original starter. Combined with a sauce made of a red pepper, a green pepper, an onion and garlic, squid is really very delicious. In addition, an idea to serve a dish upon a tasty paella in a “cookie”-form, we give a different taste, that for sure will surprise our guests.

Sauté the onion and garlic
Put in a pan a drop of oil and sauté the onion until it starts to get browned.
Add the chopped garlic and continue to sauté for a couple of minutes.
Add the peppers and tomatoes
Add chopped red and green peppers.
Let them sauté until they turn mushy.
Add the tomato sauce
Add the tomato sauce and let everything sauté for nearly ten minutes, stirring it from time to time.
Grind the sauce
Put the sauce in a glass blender, grind it and put it aside.
Prepare the rice
Put a little oil in a pan, put rice and cook it until it begins to be translucent.
Add the paprika, the sauce and broth
Add the paprika, mix it and add the chopped sautéed ingredients.
Let all the ingredients cook a couple of minutes and add the broth.
Cook the rice
We cook rice for eight minutes over a heavy fire and, after this time, low the heat and let it continue cooking for seven minutes.
Cool the rice
When we have rice prepared, we cool it on a cold surface and put it aside.
Make "cookies" forms of paella
With the help of baking cups, we make “forms” of paella and we fry it in the pan until they get crusted on the each side.
Fry the squid
While preparing “cookies”, put a few drops of oil in the pan and sauté the squid for a few minutes.
Add the grill sauce
Spice squid according, add the grill sauce and let sauté for a few minutes.
Serving
Put the “cookie” of paella on a plate, spread the squid over it and spray it with sauce. Decorate it with a sprig of parsley.
