The trinxat is a typical and very nutritious dish of a Catalan cuisine, especially in the Cerdanya area. The main ingredients to prepare the trinxat are the cabbage and the potatoes, that normally are served with bacon or pancetta. In this recipe, we propose to give the dish a special seafood taste by adding squid. As a result we will have a tasty starter, that will be ideal to warm you up during cold winter days.

Warm up the chicken broth
Put the chicken broth in a saucepan and warm it up over high heat.
Prepare the cabbage and potatoes
Cut the cabbage into strips, peel the potatoes and cut into pieces about two cm.
Boil vegetables
Boil vegetables in chicken broth for about ten minutes.
Prepare the garlic
Peel the garlic, cut it into pieces and put the pieces in the pan with a drops of olive oil over a medium heat until they become golden.
Add the cabbage and potatoes
add in the same pan the cabbage and cooked potatoes, that have been drained beforehand. We continue to sauté during 15 minutes, stirring often so that the flavors could combine.
Fry the squid
While the vegetables are cooking, put a pan with a few drops of oil to heat, spice the squid and the fry each side of it for a few seconds.
Add the grill sauce
add the grill sauce to the squid and low the fire. Continue cooking for a few minutes more.
Serving
Put on the cabbage and potatoes on the plates, place the squid above, put the grill sauce and decorate the plate with parsley
