Steak tartar with king prawns and tarragon sauce

Traditionally, by the name of steak tartar we refer to a dish, made with raw beef, flavored with herbs and other ingredients. This type of dish is also delicious with seafood, as we propose you to try in this recipe with king prawns and tarragon sauce. A second course, with which we certainly succeed when we have guests.

Ingredients

FOR 4 PEOPLE

  • 2 boxes of Argentinean red shrimp 400 g Grand Krust
  • 1 onion Figueras,
  • 1 boiled egg,
  • salt,
  • white pepper,
  • 300 ml of olive oil,
  • 2 egg yolks,
  • 80 g of ersatz caviar,
  • chopped chives,
  • chopped tarragon,
  • 1 teaspoon tarragon mustard,
  • 1 teaspoon vinegar,
  • 4 cherry tomatoes,
  • 16 toasts

Step by Step

Chop the onion
Chop the onion very finely and put it aside.

Peel the king prawns
Peel the prawn tails, remove them intestine, chop them and put it aside.

Preparing the boiled egg
Pass the boiled egg through a sieve to make it very thin and put it aside.

Prepare tarragon sauce
In a glass blender, we put 250 ml of oil, a pinch of chopped tarragon, vinegar, 50 grams of caviar substitute and mustard and we grind everything.

Flirt sauce
We put an egg yolk in a bowl and we slowly add the oil, while we slowly mix the sauce with the help of a whisk and we put it aside.

Prepare the mixture
Put in a bowl the chopped king prawns, onion, 30 g of caviar substitute, egg yolk, the egg yarn, chopped chives, salt, white pepper, 50 ml of olive oil and mix everything well.

Serving and decorating
With the help of a hoop, we put our tartar on the plates, decorating it with some tarragon mayonnaise. Garnish with a tomato cherry and toasts.

Tips Practical Advice

If we use caviar substitute when preparing mayonnaise, we do not need to add salt because the substitute is high in sodium.
