Ceviche is a typical dish of Latin American culinary culture, which consists in serving meat or fish marinated in a citrus sauce. It is usually prepared with lime or lemon. In this recipe, we propose to elaborate a cheviche of lobster and mango, a second original course that is very easy to prepare, which certainly will surprise our guests.

Prepare an onion with water, salt and ice
Cut the onion into strips, put it in a bowl filled with water, salt and ice for 15 minutes.
Peel and cut the lobster
Peel lobster, cut the tail into pieces, keep the claims and put all meat into the juice, that contains the head of the lobster..
Prepare the mix
Rub with chili the inside part of a bowl (the more chili we put, more spicy it will be) and add the juice of the limes, the chopped lobster, cut pepper and drained onion
Prepare mango
Cut cubes a half of the mango and grind the other half and let it settle during 30 minutes
Serving
When we serve the dish on the plates, we can serve ceviche drained or accompanied with marinade.
As a final point, decorate the plate with chopped coriander.
