Red sauce
Without a doubt, this is a tried and trusted favorite when it’s time for a sauce to accompany seafood or fish. You can start with a mixture of mayonnaise and ketchup. When it begins to have a uniform pink color, add the juice of half an orange along with a splash of brandy. Continue to mix until you get the texture you like. If you like it spicy, add a little tabasco. If sour is your preference, just add a little lemon.
Tartar sauce
This is the perfect sauce for recipes that call for grilled or steamed seafood. You make it by chopping up some gherkins, a hard-boiled egg, a little spring onion and some capers. Mix the ingredients well with mayonnaise, add a bit of chopped parsley and it’s ready. If it’s too thick, you can add some lemon juice or a splash of milk.
Olive tapenade
Olive tapenade is a kind of olive purée which is perfect for dressing salads or seafood carpaccio. To make it, peel and chop a clove of garlic. Add it to a bowl of black olives and a teaspoon of lemon juice. Season with aromatic herbs (oregano, rosemary and/or thyme), salt and pepper. Finally, beat the mixture using a kitchen mixer until it becomes the texture of a paste.
Guacamole
This Mexican sauce goes amazingly well with seafood cocktail. To prepare homemade guacamole, start by mixing the meat of a ripe avocado with a little lemon juice and mashing it with a fork. Chop up a spring onion, a ripe tomato, two cloves of garlic and some cilantro and add them to the avocado. Mix everything well, add salt, a little more lemon juice and blend everything with a mixer.
Yoghurt and soy sauce
This sauce goes well with tempura dishes. To make it, put some natural yoghurt in a bowl with 4 tablespoons of soy sauce, a pinch of salt and ground white pepper. Mix everything well with a whisk and your sauce is ready to serve.
